Ma-Po Tofu

Here is the recipe for Ma-Po Tofu. It is a nice simple dish and can be made in a very short time. You can have this with rice or by itself. If you don’t want to make it spicy then substitute regular bean sauce instead of hot bean sauce. While buying bean sauce check label to make sure that it does not have MSG (unless you really want it)!  Ingredients:

  1. Firm Tofu – cubed
  2. Green beans (optional)
  3. Ginger – shredded
  4. Hot bean sauce (or regulr bean sauce)
  5. Vegetable oil, sesame oil
  6. Soy sauce
  7. Salt, sugar
  8. Corn starch (make smooth paste in water)
How to prepare:
        1. Heat a little vegetable oil in a wok.
        2. Fry ginger for a few seconds.
        3. Add hot bean sauce, stir regularly. Adjust heat so as to avoid burning.
        4. After about a half minute add a little water and the tofu.
        5. Add enough water to cover about half the tofu level in the wok and raise the heat.
        6. Add soy sauce.
        7. Allow tofu to cook for a few minutes (about 10 minutes depending on quantity of tofu).
        8. Add salt and sugar according to taste. Cook for another minute or so.
        9. Add corn starch and cook for an additional minute or so.
        10. Add sesame oil and mix. Cook for an additional minute and you are done. Enjoy!
