This dish goes well with Ma-Po Tofu. Bok-Choy was used but most other green vegetables can be used. Vegetarian Ham (made from soy) can be found easily at most chinese grocery stores.Ingredients: Bok-Choy, Veggie Ham, Chinese Mushroom, Ginger.Remove core and bottom from bok-choy stems before cooking. Cut ginger into thin strips. Cut carrots into circular slices.Preparation:
- Cut veggie ham into semi-circular slices and saute in small amount of vegetable oil (just enough to wet the slices).
- Separately fry ginger in oil.
- Add salt, little water. When the water becomes hot add bok-choy stems.
- Saute bok-choy and carrots for a few minutes. Stir regularly while cooking. Don’t cook them fully.
- Add bok-choy leaves and cook for a little bit longer.
- Arrange bok-choy on a plate and decorate with veggie-ham and carrots.
