Stir-fried Green Vegetable with Ham

This dish goes well with Ma-Po Tofu. Bok-Choy was used but most other green vegetables can be used. Vegetarian Ham (made from soy) can be found easily at most chinese grocery stores.

Ingredients: Bok-Choy, Veggie Ham, Chinese Mushroom, Ginger.Remove core and bottom from bok-choy stems before cooking. Cut ginger into thin strips. Cut carrots into circular slices.Preparation: 
  1. Cut veggie ham into semi-circular slices and saute in small amount of vegetable oil (just enough to wet the slices).
  2. Separately fry ginger in oil.
  3. Add salt, little water. When the water becomes hot add bok-choy stems.
  4. Saute bok-choy and carrots for a few minutes. Stir regularly while cooking. Don’t cook them fully.
  5. Add bok-choy leaves and cook for a little bit longer.
  6. Arrange bok-choy on a plate and decorate with veggie-ham and carrots.
